What's the powder that gets added to the lime juice? Are they not baking the filled pie? Does the acid from the lime juice cause the condensed milk and egg yolks to set up without baking?

Sorry I didn't reply to this earlier. Yes, we do use trace amounts of gelatin, 3-tablespoons to each "batch" of the mix, for 12 ten-inch pies, so a quarter tbsp per pie, divided that into eight slices per pie. Our traditional "fill and chill" method -baked crust, uncooked custard- relied on the chemical reaction between the lime juice and the egg yolks to cause the custard to congeal. That reaction is less reliable with the pasteurized yolks so the gelatin in that small amount is enough to hold the custard. Cheers.

I'm going to try it. Prob doesn't need much gelatin; maybe a pack per 10 inch pie. Heats up the house to bake the crust, so don't know if it's beneficial to use this method to not bake it. Commercially it would. Texture looked similar to when one doesn't bake it or use gelatin: kind of loose. It was a nice video. I used to watch Guy Ferrai at restaurants and guess the amounts the proprietor would use so I could re-create it. Then I'd forget all about it within days. Oh well.,🙄

this is definitely a staged video -- no one in the key lime business uses a spatula to clean out the bowl of filling -- real pros use their fingers so they can ensure quality by tasting every batch... or at least that's what i'd tell the health inspector... :=)

Just saw their comment. Makes sense. I used to make pies for a restaurant and found 1tbl instant pudding added to the whipping cream kept it stablizes for a week. Probably would not hold up for long periods in heat, but they did for my delivery.

We sell them "naked" and they hold their own quite well. We do recommend topping them with fresh whipped cream (no lazy whip) however, if we sold them topped with fresh-whipped, it would turn into a puddle by the time the buyer got it home. Cheers.

Actually, limes are ripened and come to true fruition when yellow. It is a misconception that yellowed limes are past their prime. You'll notice that bagged limes (key or Persian) are usually bagged in a green mesh bag because the unknowing public won't touch actual ripened limes. If you've ever seen them on the tree (or picked them and used them) you would know and appreciate the difference. Cheers.

First of all, WHY ARE YOU YELLING? Probably to cover up your ignorance. First of all, key limes have not been commercially harvested in the Keys since the big 1935 Labor Day hurricane and the introduction of Persian limes. Second, we've been in this game for a long time (20+ years), we've visited the packing house in Colima MX who ship us our limes. We've always purchased from MX. I'm not sure of your background as a botanist, but the Spanish explorers were nice enough to distribute Citrus aurantiifolia Swingle (key limes) throughout the Americas. Size can be dependent on multiple of factors; soil conditions, seasonal changes, ripening time etc. I'm through with you, you're invited to have the last word.

@Spanto Me im actually talking about the full fledged restaurants cooking in filth with duct taped up utensils, i've worked in kitchens for over 20 years i can spot infractions when i seem them and they were terrible and would be shut down when they get inspected, which will happen when someone gets sick or dies, ive seen cases of 800 people getting food poisoning at one time with several deaths when they improperly stored second grade eggs in a casino for a function , i love this channel and this pie factory was great

RIP those lemons that fell in the sink 😔 but seriously, I LOVE key lime pie! I discovered a year ago just before the pandemic hit, that Chick-fil-A's frozen lemonade actually tastes like key lime pie! Now it may just be the one I go to here in Kentucky, but if anyone goes out to Chick-fil-A, you should try it to see if yours tastes like mine 😄 let me know if it does or not, I wanna hear how it went and what you ordered.
